He first made his mark as executive chef of the now-shuttered Toscana at The Ritz-Carlton, Hong Kong before branching out on his own with the original 8½ Otto e Mezzo Bombana in Hong Kong. As gourmands fell in love with his refined style of Northern Italian cuisine, chef Bombana expanded his empire with locations in Shanghai and Macau.

  • Upon entering the Macau restaurant, a marble bar serves as a convivial transition into the spacious main dining room. It seems every detail has been carefully planned, from the luxuriously thick napkins to the relaxing instrumental music.
  • Born in Naples, executive chef Antimo Maria Merone helms the kitchen and ensures each dish balances tradition and experimentation.
  • The menu in Macau largely mirrors that of the original Hong Kong location and highlights fresh pastas — they are well prepared, seasoned and presented.
  • Bombana’s team treats every guest like royalty. You won’t want for anything, be it a sampling of rare fortified wine, an extra slice of bread or a custom cocktail prepared to your liking.

Things to Know

  • Otto e Mezzo means “eight and a half” in Italian, a reference to an acclaimed 1963 film of the same name from Bombana’s favorite Italian director Federico Fellini.
  • The Italian restaurant is closed on Wednesdays, so plan your visit accordingly.
  • In Macau, there’s a 10 percent service charge added to the bill. However, it’s customary to leave another 5 to 10 percent if you’ve had an excellent experience.
  • The smart-casual dress code is relatively strict here, which means no slippers or hats. Men should also avoid sleeveless tops, shorts and open-toed shoes.
  • Traveling with children? Little ones eight or older can join you for dinner. Otherwise, younger children will enjoy complimentary tickets to the Kids Club, where they'll be spoiled with educational activities.

The Food

  • For a standout experience, try one of the signature pasta dishes, such as artisanal linguine with Hokkaido sea urchin or housemade tagliolini with 24-month-aged Parmigiano Reggiano and Alba white truffle. Deceptively technical, the understated taglioni is made daily with premium Italian flour and Japanese eggs.
  • Roe deer is another specialty, accompanied by delicately sautéed spinach, hazelnut bagna càuda (an Italian dipping sauce) and natural jus.
  • Steak lovers will not want to miss the Mayura M9 sirloin. Sourced from esteemed Mayura Station farm in Australia, the beautifully marbled meat is seared then finished on Japanese oak charcoal for a charred flavor.
  • Save room for dessert. Heavenly options include a platter of hand-picked cheeses and a crispy layered millefoglie (“thousand leaves”) cake with mixed berries and Chantilly cream. Then there’s the decadent tiramisu, which is beautifully balanced with just the right amount of espresso, chocolate and mascarpone.
  • An impressive 32-page wine list comprises a collection of hard-to-find Italian, French and New World labels. The expert sommeliers will guide you to the perfect pairing based on your dish selections.

The Design

  • Throughout the 5,000-square-foot restaurant, you’ll catch accents of vibrant red, blue and yellow that pop against the crisp white tablecloths.
  • Recurring motifs such as flowers and lace, metallic light fixtures and oversized vases add to the modern atmosphere.
  • Marking the entrance of the restaurant, an imposing U-shaped marble bar provides a comfortable place to unwind before or after a meal.
  • The majority of the décor and tableware — from the chargers to the wine glasses to the vases — has been sourced from luxury artisans in Italy.
  • For larger groups, two intimate private dining rooms provide residential-style settings where you can make yourself at home.
