The Restaurants

At the Park Hyatt’s signature restaurant, Square One, delight in a mix of both traditional Vietnamese cuisine and Western fare, all prepared in one of the eatery’s five show kitchens.
Alfresco dining is best accomplished at Italian restaurant Opera, which overlooks its namesake (and famous Ho Chi Minh landmark), the Opera House. Chef Matteo Fracalossi cooks up housemade pastas, gourmet pizzas and a mix of seafood and meat entrées, like a Florentine-style charcoal grilled T-bone steak and grigliata di pesce (grilled fish).
Reservations are recommended for both Square One and Opera, but make sure to inquire about the best seating area for your taste, as each dining room is broken into distinct sections that all offer different experiences.
2 Lam Son, often referred to as “the Martini Bar,” prides itself on a selection of cocktails inspired by Vietnamese culture. Taste test a variety of libations, from martinis mixed with ingredients like betel leaves, rambutan (one of the most beloved tropical fruits in Vietnam) and lotus flower, to twists on a Negroni featuring bitter melon.
